A professional chef has revealed the ultimate ‘comfort’ recipe all Italians have mastered.

Max Mariola’s aglio olio peperoncino spaghetti recipe is the ‘perfect’ dish to bookend a long day – and foodies cannot stop recreating it.

The simple recipe requires parsley, spaghetti, garlic, spicy peppers, and olive oil – and takes less than 30 minutes to prepare.

‘This is what Italians need after a long day,’ Mariola said about the ‘game-changing’ pasta dish.

How to make Max Mariola’s aglio olio peperoncino spaghetti 

Ingredients:

  • Parsley
  • Spaghetti
  • Garlic
  • Spicy peppers
  • Olive oil

The Italian chef first chopped up the parsley and garlic, while simultaneously heating up olive oil in a large pan.

He then placed the parsley stems and garlic into the olive oil and let it brown before taking it out.

The chef warned against letting the garlic burn too much during this step.

While the oil remained on the stove, Mariola placed pasta into salted water and let it boil.

In the meanwhile, Mariola grated garlic onto the olive oil, followed by red and green chillies.

For the next step, the chef added the chopped parsley and some cooking water to the oil, and adding the spaghetti al dente to the pan. 

‘Let the pasta absorb all the flavour,’ the chef advised.

He then added more salt and pasta water, finally topping the meal off with peperoncino cheese.
